Ingredients

1/2 Cup, pieces or slices Mushrooms
1/4 Medium (2-1/2" dia) Onions
0 Pepper Orange Bell Pepper
1/4 Cup Spinach
1 Cup Egg White

Directions

Cut mushroom, onion, red bell peppers, and shred spinach.

Heat pan over medium heat and spray with non-stick spray and add onion, bell pepper, and mushrooms; cook for about 3 minutes or until tender

Add spinach and cook until wilted, about 3 minutes.

Add egg whites and cook until set.

Serve hot and enjoy!
