Roast Pumpkin Frittata Healthy Recipe

Ingredients

1 1/3 Cup (1" cubes) Pumpkin
1/2 Tsp Cinnamon
1 Tsp Chili Powder
1/2 Tbsp Olive Oil
1 Spray , about 1/3 second Pam Cooking Spray
1/2 Large Onions
1 Tsp Turmeric
1 Tsp Paprika
2 Extra large Egg
2/3 Cup, crumbled Feta Cheese

Directions

Preheat oven to 450 degrees F.

Dice pumpkin into small cubes, mix with cinnamon, chili powder, and olive oil.

Spread onto a sheet pan and roast in the oven for about 30 minutes or until tender.

Spray frying pan with oil, fry diced onion until it starts to become see-through, add turmeric and paprika and fry for another 30 seconds to become fragrant.

Add pre-roasted pumpkin, spreading in an even layer.

Crack in 2 eggs, and top with feta cheese and fry until eggs are set.
