7 Extra large Egg
3 Tbsp Lowfat Milk
2 Oz Feta Cheese
1 Cup, chopped or sliced Tomatoes
4 Cup, chopped or diced Broccoli
1 Dash Salt
1 Dash Pepper
Preheat oven to 350 degrees F.
Prepare a muffin tin.
Mix eggs and milk in a bowl.
Add crumbled goat cheese and chopped vegetables.
Season with salt and pepper.
Bake for about 15 minutes or until eggs are set and the tops are golden.
You can refrigerate and reheat these in the microwave for a quick breakfast or snack.
Microwave on high for approximately 30 seconds.
Serve warm.
