1 Cup Brown Rice
1 Tbsp Canola Oil
1/2 Pack Coleslaw Mix
1 Cup, pieces or slices Mushrooms
1/4 Cup, chopped Onions
2 Cloves, minced Garlic
1/4 Tsp Salt
1/4 Tsp Crushed Red Pepper Flakes
8 Oz Cheddar Cheese
4 Tortilla (approx 7-8" dia) Tortillas
Preheat oven to 350 degrees F.
Prepare rice as per package directions.
Melt oil in a 10" skillet over medium-high heat until hot.
Add all ingredients (except cheese, rice, and tortillas).
Cook over medium-high heat, stirring occasionally until vegetables are crispy tender (3-5 minutes).
Remove from heat.
Stir in cheese and rice
Fill tortillas, roll, and bake 10 minutes.
