1/2 Cup Whole Wheat Pasta
1 Tbsp Olive Oil
1 Breast, bone and skin removed Chicken Breast
4 Large Olives
1/2 Medium (approx 2-3/4" long, 2-1/2" dia) Green Bell Pepper
1/4 Cup, shredded Mozzarella Cheese
1/4 Cup grated Carrots
2 Tbsp Italian Dressing
Prepare pasta as per package directions until al dente; drain, rinse with cold water, and set aside.
Heat oil in a pan over medium-high heat.
Cook chicken 4-6 minutes per side or until cooked through and no longer pink.
Let rest a few minutes before chopping into bite sized pieces.
Slice olives and peppers.
Mix all ingredients and toss together well.
