3/4 Cup Chickpeas
2 Medium Cucumber
1 Medium (2-1/2" dia) Onions
4 Medium Tomatoes
1 Fruit, without skin and seed Avocados
2 Tbsp Parsley
1 Fruit (2-3/8" dia) Lemons
1 Tsp Olive Oil
1 Tsp Salt
1/4 Tsp Pepper
In a large bowl, add all ingredients and gently stir to combine.
Serve cold.
You can also make this salad ahead for up to a day if you add lemon juice, oil, salt and pepper immediately before serving.
