1 Fruit without refuse Mangos
2 Tbsp Fresh Cilantro
1/4 Cup Parsley
4 Stalk Onions
1 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
1 Cup Corn
3 Cup Black Beans
1 Lime yields Lime Juice
1 Cloves, minced Garlic
1 Tsp, ground Oregano
1 Tsp, ground Cumin
0 Grams Chili Powder
9 Cup shredded Lettuce
Peel, pit, and cube mango.
Chop cilantro, parsley, green onions, and bell pepper.
If using fresh on the cob, steam or boil 2-3 ears for 3-5 minutes or until tender.
Drain and cool.
Cut kernels off cob, cutting close to the cob.
Mix all ingredients, except lettuce.
Allow to stand at least 15 minutes to marinate before serving.
Serve on bed of chopped green lettuce.
