Even though this recipe may seem higher in fat than most of the others, it’s the good kind of fat that comes from olive oil and fish. So enjoy it guilt-free.
1/4 cup (60 ml) olive oil
1 2 ounces (340 g) salmon fillets, cubed
1 2 ounces (340 g) cod fillets, cubed
1 teaspoon (3 g) minced garlic
1/2 cup (120 ml) white wine
1/2 teaspoon (0.5 g) dried oregano
1/2 teaspoon (0.6 g) dried rosemary
1 teaspoon (0.1 g) dried parsley
1 tablespoon (10 g) onion, minced
1. Heat oil in a heavy skillet. Add salmon, cod, and garlic and saute for a minute or two, until nearly cooked through.
2. Add wine and remaining ingredients and continue cooking until sauce has been reduced to about half.
3. Serve over pasta.
