2 Medium Zucchini
1 Cup, shredded Cheddar Cheese
1 Small Onions
1 Dash Salt
1 Dash Pepper
1 Cup cherry tomatoes Cherry Tomatoes
Preheat oven to 350 degrees F.
Trim the ends off zucchini.
Cut zucchini in half lengthwise; scoop out pulp, leaving 1/2-in.
Finely chop pulp.
Note: When scooping out the pulp for Zucchini Boats, a teaspoon is just the right size.
Use a food processor or blender to finely chop the pulp quickly
Mix pulp, 3/4 cup cheese, onion, salt, and pepper together.
Spoon into the zucchini shells.
Dot with cherry tomatoes.
Place in a greased 13-in.
Sprinkle with remaining cheese.
Bake, uncovered, for 25-30 minutes or until zucchini is tender.
