Ingredients

1 3/4 Cup Wheat Flour
1 Tbsp Baking Powder
3 Tsp Sugar
1/2 Tsp Salt
2 Large yolk (separated from white) Egg Yolk
1 3/4 Cup Reduced Fat Milk
1 Tsp Vanilla Extract
1/2 Cup Applesauce
2 Large Egg White
2 Cup, unthawed Blueberries, Frozen

Directions

Preheat a waffle maker and spray with non-stick spray.

In a large mixing bowl stir flour, baking powder, sugar, and salt.

In a small mixing bowl beat egg yolks, milk, vanilla, and applesauce.

Add to the flour mixture all at once.

Stir mixture until blended.

In small mixer bowl beat egg whites until stiff peaks form.

Gently fold beaten egg whites into original mixture, fold in blueberries, and do not over mix.

Pour batter onto preheated waffle maker and cook as per waffle maker specifications.

To keep waffles warm while making the batch, turn oven on to 200 degrees F and place the cooked waffles on the wire rack.
