2 Servings
1/2 Cup, chopped Walnuts
1 Large Pears
8 Oz Mixed Baby Greens
1/4 Cup Currants, Zante
3 Tbsp Rice Wine Vinegar
1/2 Cup chopped Celery
2 Large (3-1/4" dia) Apples
Crush 1/4 cup of walnuts with the back of a wooden spoon.
Peel and grate the pear.
Combine these with the baby greens, currants, vinegar, and diced celery (or arugula, etc.
) in a bowl.
Top with remaining walnut halves and the diced apples (or additional pears).
Garnish salad with additional currants.
