Ingredients

2 Tbsp Olive Oil
1 Medium (2-1/2" dia) Onions
1 Cloves, minced Garlic
1 Tbsp Chili Powder
2 Tsp, ground Cumin
2 Tsp, ground Oregano
0 Tsp Cayenne Pepperr
1 Small Zucchini
1 Small Squash
1 Package (10 oz) Red Pepperrs
2 1/2 Cup Tomatoes
2 Tbsp Tomato Paste
1 Cup Corn
1 Can Canned Black Beans
1 1/2 Cup Kidney Beans
1 Dash Salt
1 Dash Pepper

Directions

Heat the oil in a Dutch oven over medium heat.

Add the onion and cook until it’s softened, 5-7 minutes.

Add the garlic, chili powder, cumin, oregano, and cayenne, and cook until fragrant, about 1 minute

Stir in the zucchini, yellow squash, and red pepper; cook until they’re softened, 7-10 minutes.

Add the tomatoes, tomato paste, corn, and beans.

Bring the chili to a boil, then reduce the heat to low and simmer for 20 minutes.

Season with salt and pepper to taste.

Serve and enjoy!
