Ingredients

1 Tbsp Coconut Oil
16 Oz Ground Turkey
5 Medium (4-1/8" long) Scallions
2 Cloves, minced Garlic
1 Pepper Red Peppers
1 Tbsp Fish Sauce
2 Tsp Lime Juice
1/4 Sprigs Fresh Cilantro
2 Fruit, without skin and seed Avocados
2 Medium whole (2-3/5" dia) Tomatoes
2 Head Lettuce

Directions

Heat the coconut oil in a large frying pan over a high heat.

Add the turkey mince and fry for 3-5 minutes, breaking up the mince as you cook.

Add the scallions, garlic and red pepper, and stir-fry for another 2 minutes, by which time the turkey mince should be cooked through.

Add the fish sauce, lime juice, and cilantro.

Mix everything together well, then remove the pan from the heat.

Combine the avocados and tomatoes in a bowl.

Lay out the lettuce leaves like little boats on your serving plate, then spoon in the turkey mixture and top with the avocados and tomatoes.
