3 Cup Tortellini
3 Cup cherry tomatoes Cherry Tomatoes
2 1/2 Cup Corn
1 1/3 Cup leaves, whole Basil
4 Tbsp Parmesan Cheese
1 Tsp Pepper
1/2 Cup Olive Oil
1 Tbsp Red Wine Vinegar
1 Tbsp Lemon Juice
1/2 Tbsp Dijon Mustard
1 Cloves, minced Garlic
1 Tsp Salt
Boil tortellini in salted water according to package directions.
Drain and cool.
In a large salad bowl, combine tortellini, sliced tomatoes, fresh corn kernels, fresh chopped basil, Parmesan cheese, and pepper.
Combine all remaining ingredients in a jar for the vinaigrette.
Cover with a tight fitting lid and shake vigorously.
Pour over tortellini salad and gently mix all ingredients until well combined.
Chill for several hours before serving.
