2 Tbsp Lemon Juice
3 Medium Tomatoes
4 Medium (4-1/8" long) Scallions
1 Large (8-1/4" long) Cucumber
1/4 Cup Parsley
1 Pita, large (6-1/2" dia) Pita Bread
1/4 Cup Olive Oil
PREPARATION: Chop tomatoes, scallions, parsley and cucumber.
Stir together tomatoes, cucumber, scallions, parsley, and salt and pepper to taste.
Squeeze lemon juice over salad and stir.
Drizzle oil over salad and stir.
