1/2 Cup White Rice
1/4 Tbsp Vegetable Oil
1 Medium (2-1/2" dia) Onions
1 Tbsp Curry Paste
1/3 Cup Coconut Milk
7 Oz Tofu
1 1/4 Cup solids Green Beans
1 Tbsp Chili Peppers
1 Tsp Spearmint
Prepare rice as per package directions.
Set aside.
Heat sunflower oil in a pan over medium-high heat.
Add chopped onion and red curry paste.
Mix well.
Add coconut milk and heat to a boil.
Heat tofu and green beans until green beans are tender.
Top rice with the curry mixture, tofu, and green beans.
Garnish with chili peppers and spearmint.
