2 Tbsp Olive Oil
4 Breast, bone removed Chicken Breast
4 Large (7-1/4" to 8-/1/2" long) Carrots
2 Cloves, minced Garlic
1 1/4 Lb Broccoli
2 Tbsp Ginger Root
1/3 Cup Soy Sauce
1/3 Cup Water
3 Tsp Cornstarch
1/4 Cup Honey
Chop chicken and broccoli.
In a small bowl mix the ginger, soy sauce, water, cornstarch, and honey.
In a large sauce pan, heat the olive oil.
Add the chicken and carrots and cook stirring until almost tender, about 6-8 minutes.
Add garlic and cook for another minute.
While the chicken is cooking heat the broccoli in a microwave safe bowl for 3-4 minutes.
Add the sauce to the chicken and carrots.
Stir for 1-2 minutes, or until thickened.
Turn heat off and add the broccoli.
Serve hot and enjoy!
