1/2 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
2 Cup Spinach
1 Sweetpotato, 5" long Sweet Potato
1 Extra large Egg
2 Tsp Avocado Oil
Cook chopped bell pepper, spinach and shredded sweet potatoes in avocado oil for a few minutes, until spinach is just wilted and potatoes are tender, about 5 minutes.
Cook egg in a non-stick frying pan until yolk has reached desired doneness.
Serve on top of the potatoes/spinach mixture.
