2 Cup sliced Mushrooms
1 Dash Salt
1 Dash Pepper
6 Cup, cubes Yam
1 Cup, chopped Onions
1 Cup, chopped Green Bell Pepper
3 Cloves, minced Garlic
1 Tsp Garlic Powde
Preheat the oven to 375 degrees F.
Heat the oil in a large oven safe non-stick skillet over medium-high heat.
Add the mushrooms to the pan, season with salt and pepper, and cook 5-6 minutes until brown
Stir in the sweet potato, onion, bell pepper, garlic, and garlic powder.
Season with salt and pepper and transfer the pan to the oven
Bake 25-30 minutes or until the sweet potatoes are browned on the outside and soft all the way through.
