2 Tbsp Butter
1 Cup, chopped Onions
1 Cup, sliced Red Bell Pepper
1 Tbsp Cayenne Pepper
1 Tsp Salt
1 Cup Corn
2 Medium whole (2-3/5" dia) Tomatoes
1 Cup Whole Milk
In a pan, melt butter.
Add onion, bell pepper, cayenne and salt.
Cook, stirring occasionally until onion is soft, about 5 minutes.
Add corn and tomatoes; stir often until corn is tender and tomatoes have softened, about 10 minutes.
Stir in milk, remove from heat and serve immediately.
