1 Medium Cucumber
1 Stalk, medium (7-1/2" - 8" long) Celery
1 Cloves, minced Garlic
1 Fruit Avocados
3 Tbsp chopped Onions
1 Medium whole (2-3/5" dia) Tomatoes
12 Oz Shrimp
3 Tbsp Lime Juice
1 Tsp Adobo Fresco
1/4 Cup Ketchup
2 Tbsp Water
2 Tbsp Fresh Cilantro
Peel and devein medium shrimp.
Slice celery rib.
Chop avocado.
Peel and chop cucumber.
Chop tomato.
Chop white onion finely.
Mince garlic clove.
Chop cilantro.
Cook shrimp in lightly salted boiling water until just cooked through, 2 to 3 minutes, then drain.
Chill until cold, about
10 minutes.
Gently stir together remaining ingredients with 1/2 teaspoon salt, then stir in shrimp.
