Ingredients

8 Oz Japanese Noodles
4 Large Scallions
3 Cup Fresh Cilantro
1 Large (2-1/4 per pound, approx 3-3/4" lo Red Bell Pepper
1/4 Head, medium (about 5" dia) Red Cabbage
3 Medium Carrots
1/2 Cup Soy Sauce Made From Soy And Wheat (Shoyu)
1 Tsp Sesame Oil
1/4 Cup Peanut Butter
2 Tbsp Rice Wine Vinegar
1 1/2 Tsp Crushed Red Pepper Flakes

Directions

Cook soba noodles according to package directions and rinse.

Place in a bowl.

Chop scallions and cilantro, slice bell pepper and cabbage, and shave carrot with vegetable peeler.

Toss with soba noodles

In a small bowl, whisk soy sauce, sesame oil, peanut butter, rice wine vinegar, and red pepper flakes Toss together with remaining ingredients and serve.
