Ingredients

1/2 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
1/2 Medium (2-1/2" dia) Onions
1 Pepper Jalapeno Peppers
4 Tortilla medium (approx 6" dia) Tortillas
1/2 Oz Cheddar Cheese
1/2 Medium whole (2-3/5" dia) Tomatoes
1 Tbsp Vegetable Oil
1 Tbsp Fresh Cilantro
2 Tbsp Sour Cream
2 Tbsp Lime Juice

Directions

Fry pepper, jalapeƱo, and onion over medium-high heat until soft

Brush tortillas on one side with oil.

On uncoated sides place half the cheese, followed by pepper and onion mixture, cilantro and remaining cheese.

Top with other tortillas, coated side up.

Fry 4-5 minutes on medium heat turning once, until lightly browned and the cheese has melted.

Serve, topped with lime wedges, more cilantro and sour cream to taste.
