10 Oz Shrimp
1 Medium (4-1/8" long) Scallions
1/4 Cup, sliced Red Bell Pepper
3 Tbsp Bread Crumbs
1 2/3 Oz Egg Whites
1 Tbsp Olive Oil
Purée about 5-6 medium shrimp, majority of scallions, and the bell pepper in a food processor.
Chop remaining shrimp and mix together with purée, breadcrumbs, and egg whites.
Form into 4 patties and refrigerate for about a hour.
Heat oil in a pan over medium-high heat.
Add patties and cook about 5 minutes per side until patties are cooked through and golden brown.
