1 Cup, crumbled Feta Cheese
8 Extra large Egg
15 Oz Chickpeas
3 Medium whole (2-3/5" dia) Tomatoes
1 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
1 Tbsp Olive Oil
3 Cloves, minced Garlic
2 Pepper Jalapenos
Saute garlic, jalapenos in oil.
Add tomato, bell pepper, and chickpeas.
Poach eggs once this mixture gets saucy.
Add salt and pepper.
Top with cheese, garnish with cilantro.
