2 Large Baby Zucchini
1 Medium (2-1/2" dia) Onions
2 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
1/4 Cup Olive Oil
1 Tbsp Salt
1 Tbsp Pepper
1 Tbsp Garlic Powder
1 Fruit without seeds Lemons


Line 2 rimmed baking sheets with aluminum foil.

Preheat the oven to 450 degrees F

Prep the vegetables.

Toss all the vegetables with the olive oil

Season with salt, pepper, and garlic powder

Spread the vegetables on the prepared baking sheets.

Bake in the preheated oven for 18-25 minutes, until the vegetables are softened and charred slightly.

Drizzle with lemon juice and serve.
