4 Potato medium (2-1/4" to 3-1/4" dia) Russet Potatoes
1 Cup Light Mayonnaise
3 Tbsp Pickle Relish
4 Tsp Sugar
1 Tbsp chopped Onions
2 Tsp or 1 packet Mustard
1 Tsp Vinegar
1 Tbsp Celery
1/4 Tbsp Parsley
1 Tsp Pepper
1 Dash Salt
Bring a large pot of salted water to a boil.
Add potatoes and cook until tender but still firm, about 15 minutes.
Drain, cool and chop.
In a large bowl combine the potatoes, mayonnaise, sweet pickle relish, sugar, onion, mustard, vinegar, celery, parsley, pepper, and salt.
Mix well, chill and serve.
