1 Cup, chopped Dates, Deglet Noor
1/2 Cup, whole Almonds
2 Cup Cashew Nuts
1 Beet (2" dia) Beets
1/4 Cup Maple Syrups
2 Tbsp Lemon Juice
1 Tbsp Coconut Meat
2 Tbsp Water
Soak cashews in water for 2 hours.
Prep beet by peeling and slicing it.
Blend dates and almonds together and spread evenly into a 6-7" round pan.
Press down a bit to form the crust.
After almonds have soaked, blend together remaining ingredients until a smooth consistency is reached.
Pour into pan, over crust.
Refrigerate for 8 hours or overnight.
Sprinkle with coconut before serving.
