1 Tbsp Olive Oil
1 Medium (2-1/2" dia) Onions
1 Tsp Garlic
1 Tsp Curry Powder
1 Tsp Ginger
1/4 Tsp Allspice
1/4 Tsp Cayenne Pepper
1 2/3 Cup Tomatoes
30 Oz Chickpeas
1 Dash Salt
Add olive oil into a sauce pan.
Turn burner to medium heat.
Add the diced onions and stir until they are translucent (about 4 minutes).
Add garlic.
Stir 1 minute.
Add spices and tomatoes with juice.
Cook for 3 minutes.
Drain and rinse the chickpeas.
Add to tomato mixture.
Stir.
Simmer on medium heat for 5 minutes, stirring occasionally.
Add salt to taste.
