2 Potato large (3" to 4-1/4" dia) Potato
1 Medium (2-1/2" dia) Onions
1 Large Egg
2 Tbsp Wheat Flour
1/2 Tsp Salt
1/2 Tsp Pepper
2 Tbsp Olive Oil
Combine shredded potatoes and onion with egg in a bowl.
Add flour slowly until mixture comes together.
Add salt and pepper to taste.
Cover base of frying pan with oil and heat.
Add spoonfulls of mixture to the frying pan and flatten.
Turn and cook until golden on both sides.
