3/4 Cup, chopped Green Bell Pepperr
1/3 Cup, chopped Onions
1 Tbsp Butter
8 Oz Monterey Cheese
6 Large Egg
1 Cup, fluid (yields 2 cups whipped) Heavy Whipping Cream
1/2 Tsp Salt
1/2 Tsp Pepper
Preheat oven to 350 degrees F.
Sauté the peppers and onion in butter until tender, 5-8 minutes.
Place the cheese in a greased large pie plate, top with the pepper mixture.
Beat the eggs with the cream, salt, and pepper.
Pour evenly over the peppers.
Bake for 35 minutes, until a knife inserted in the center comes out clean.
Let stand 10 minutes before cutting.
