1/2 Tbsp Olive Oil
1 Medium whole (2-3/5" dia) Tomatoes
2 Large Egg
2 1/2 Tsp Parsley
1 Tsp Pepper
1 Slice regular Multi-Grain Bread
Chop tomato and cook in frying pan over medium heat with oil for two minutes until softened.
Remove from pan and set aside.
Scramble eggs in the same pan and then add tomatoes back in.
Add parsley and pepper.
Cook until eggs are set.
Toast bread.
Top with tomato scramble.
