1 Cup, chopped Onions
1 Cup, sliced Red Bell Pepper
1 Cup, whole Mushrooms
2 Cup Spinach
4 Extra large Egg
1 Tbsp Olive Oil
2 Clove Garlic
Chop up veggies.
Preheat oven to 350 degrees F.
Whisk eggs in a bowl.
Heat oil in a pan over medium heat.
Add in veggies and cook until tender, 5-10 minutes.
Add garlic during the last 30 seconds.
Combine cooked veggies into egg mixture.
Pour into muffin tins.
Bake for 15 minutes or until firm.
Let cool for a few minutes.
Store in airtight containers and enjoy!
