Ingredients

1/4 Cup Lentils
1 Slice Whole-Wheat Bread
1/4 Cup chopped Celery
1/4 Cup, chopped or sliced Tomatoes
2 Tbsp Hummus
1 Cup Alfalfa Sprouts
1/4 Cup Pumpkin And Squash Seed Kernels

Directions

Prepare lentils as per package directions.

Set aside.

Toast Bread.

Mix lentils, chopped celery and chopped tomatoes in a small bowl.

Spread hummus over toast.

Scoop lentil mixture on top of hummus.

Add sprouts and pumpkin seeds on top for garnish.
