2 Cup, shredded Cheddar Cheese
2 Cloves, minced Garlic
2 Medium (2-1/2" dia) Onions
1 Cup Kidney Beans
18 Oz Ground Beef
1 Cup, sliced Red Bell Pepper
2 Serving Mexican Style Rice, As Packaged
1 Tbsp Chili Powder
1 2/3 Cup Tomatoes
7 Oz Tortilla Chips
Grate the cheese, mince the garlic, chop the onion, and drain the kidney beans.
Brown the minced beef in a pan over medium heat until cooked through, about 8-12 minutes.
Add the onions, garlic, and peppers, and cook until softened, about 5-7 minutes.
Remove form heat, mix in chili powder, tomatoes, and kidney beans.
Leave to cool, whilst preparing other ingredients.
Prepare rice as per package directions and then pour into a casserole dish.
Cover the layer of rice with the beef/vegetable mix.
Cover the beef/vegetable mix with the tortilla chips, and finally, cover with grated cheese,
Bake in the oven for 45 minutes, cool for a few minutes, and serve.
