2 Medium Carrots
2 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
1/2 Large Zucchini
2/3 Cup cherry tomatoes Cherry Tomatoes
3 1/3 Cup Spinach
3 1/2 Oz Smoked Salmon Lochmuir
6 Large Egg
1 1/3 Cup, small curd (not packed) Cottage Cheese
2/3 Cup, shredded Cheddar Cheese
Preheat oven to 375 degrees F.
Small dice the vegetables and set aside.
Heat oil in a sauté pan over medium heat and add the chopped vegetables.
Cook until soft, about 5-7 minutes, and drain off any liquid.
Add the smoked salmon.
Use a hand held whisk to mix the eggs and cottage cheese until smooth
Pour the smoked salmon and vegetable mixture into a casserole dish.
Pour egg mixture over top, cover with shredded cheese, and bake for about 25 minutes or until eggs are completely set.
