1 Tsp Parsley
1/2 Medium (2-1/2" dia) Onions
1/2 Tsp Olive Oil
1 Tsp Lemon Zest
1/4 Lemon yields Lemon Juice
1/2 Dash Salt
2 Dash Pepper
2 Slice, regular Rye Bread
1 Cup Arugula
Mix tuna with the parsley, half of the red onion, olive oil, lemon zest and juice, salt, and pepper in a bowl; serve on rye with remaining red onion and arugula.
