1 1/2 Lb Beef Round
1 Large Onions
4 Tsp Curry Paste
3 Potato medium (2-1/4" to 3-1/4" dia) Red Potatoes
3 Large (7-1/4" to 8-/1/2" long) Carrots
3 Cup Water
Dice beef into 1 inch pieces.
Dice one large onion.
In a large skillet, sauté meat and onion in oil until lightly browned, about 3 minutes.
Add carrots and potatoes.
Discard excess oil.
Add 3 cups of water and bring to a boil.
Reduce heat, cover and simmer until meat and potatoes are tender, about 10 minutes.
Add curry and sauté to coat.
Simmer for another 5 minutes or so, stirring constantly (if curry sauce becomes too thick, just add water).
Pour over freshly cooked rice, if desired.
