1 Breast, bone and skin removed Chicken Breast
1 Medium whole (2-3/5" dia) Tomatoes
1 Tbsp, chopped Basil
1 Tbsp Parmesan Cheese
1/4 Tsp Salt
1/4 Tsp Peppercorn


Preheat oven to 350 degrees F.

Flatten the chicken breast by placing it between two sheets of baking paper and beating lightly with a rolling pin.

Line a baking tray with foil and place the chicken on top.

Chop the tomato and basil leaves.

Top the chicken breast with the tomato, basil leaves, and finally the grated parmesan.

Add salt and pepper, to taste.

Bake in the oven for about 20 minutes or until chicken is cooked through, no longer pink, and the juices run clear.
