Ingredients

1 Large Onions
1 Large (2-1/4 per pound, approx 3-3/4" lo Red Bell Pepper
1 Package (10 oz) Lima Beans
3 Tbsp Butter
1 Large (2-1/4 per pound, approx 3-3/4" lo Red Bell Pepper
1 1/4 Cup kernels Corn
4 Medium Zucchini
1 Tbsp Marjoram
1 Dash Salt

Directions

Cut onions, zucchini and bell peppers into 1/2 inch pieces.

Melt butter in heavy large skillet (preferably cast iron) over medium-high heat.

Add onion; cook until golden, about 5 minutes.

Add zucchini and peppers; cook until beginning to soften, stirring often, about 5 minutes.

Add lima beans and corn; cook until heated through, stirring constantly, about 5 minutes.

Mix in marjoram.

Season with coarse salt and black pepper.

Transfer succotash to large bowl and serve.
