Ingredients

1 Cucumber (8-1/4") Cucumber
2 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepperr
4 Tomato Roma Tomatoes
1 Medium (2-1/2" dia) Onions
3 Clove Garlic
3 3/4 Fl oz Tomato Juice
1/4 Cup White Wine Vinegar
1/4 Cup Olive Oil
1/2 Tbsp Salt
1 Tsp Pepper

Directions

Cucumbers should be halved and seeded, but not peeled.

Garlic should be minced.

Roughly chop all vegetable in 1" pieces.

In a food processor, pulse each vegetable until roughly chopped.

Do not overprocess.

Mix and chill.
