Ingredients

12 Medium whole (2-3/5" dia) Tomatoes
1 Small Onions
1 Cup chopped Celery
1 Tsp, crumbled Bay Leaf
1/4 Tsp Paprika
1/2 Tsp Sugar
3 Slice (1/8 of fruit) Lemons
1 Dash Salt

Directions

Core tomatoes (just remove its top green part) and cut them into thin wedges.

Chop onion, and celery.

Add tomatoes, chopped onion, chopped celery, bay leaf, sugar, paprika and salt in a pot.

Cook uncovered on low heat for around 25-30 minutes or until tomatoes become soft and mixture is juicy.

Stir in between occasionally.

Strain the mixture through a fine sieve to get juice, discard the solids.

Another option is to puree the mixture in a blender and strain through sieve.

Chill the mixture for 30 minutes before serving.

Serve in chilled glasses and garnish with lemon wedges.
