2 Medium (7" to 7-7/8" long) Banana
1 Cup Oatmeal
1/3 Grams Whey Protein Powder
1/2 Cup (not packed) Raisins
2 Oz Coconut Meat
1 Tsp Vanilla Extract
*This recipe is Gluten-Free!* Preheat the oven to 350 F (180 C).
In a large bowl, mash up the bananas with a fork and add in the oats, coconut, protein powder and vanilla.
Mix well and then add the raisins (or walnuts) last.
Mixture should be sticky.
Scoop the dough into cookie shapes and place on a lightly greased baking tray or nonstick cookie sheet.
Cookies do not expand when baked so make them the size you want to serve.
Bake for 15-20 minutes.
Allow to cool for 5-10 minutes and serve.
