Ingredients

4 Medium Zucchini
1 Tbsp Olive Oil
1 Dash Salt
1 Dash Pepper
1 Cup Black Beans
1 Cup Corn
1 Tsp Pepper Or Hot Sauce
1 Cup, shredded Monterey Cheese
1 Cup Salsa
1/4 Cup chopped Onions
1 Pepper Jalapeno Peppers
1 Fruit, without skin and seed Avocados
1 Cup Fresh Cilantro
1 Tbsp Sour Cream
2 Tbsp Lime Juice

Directions

Toss the sliced zucchini in the oil, salt and pepper and cook on the grill or in a grill pan over medium heat until just tender but still slightly crispy, about 2-3 minutes per side, before topping with cheese and cooking until it melts, about 1-2 minutes.

Serve the cheesy grilled zucchini topped with the salsa, onions, jalapeno, avocado, cilantro, sour cream and lime juice.
