2 Tbsp Butter
2 Tbsp Olive Oil
3 Potato medium (2-1/4" to 3-1/4" dia) White Potatoes
1/2 Lb Mushrooms
1 Clove Garlic
1/2 Package (10 oz) Spinach
1/2 Cup Reduced Fat Milk
1 Tbsp Pepper
1 Tbsp Salt
4 Large Egg
Heat butter and oil in frying pan.
Add potatoes and brown on all sides.
Transfer to plate, then add mushrooms and cook for 5 mins.
Return potatoes to pan and add garlic and spinach.
Mix eggs and milk together and season.
Pour into pan and cook gently for 5 mins.
Turn heat up to medium-high and grill tortilla for 6-8mins.
Check for setting and serve.
