1 Cup, cubes Eggplant
4 Tbsp Olive Oil
2 Cloves, minced Garlic
1 Dash Salt
Peel eggplant and cut into half-inch dice.
Coat large skillet with olive oil over medium-high heat.
Sauté eggplant cubes for 4-5 minutes, until tender.
Add minced garlic and toss for a couple of minutes.
Remove from heat.
Salt to taste.
Can be served hot or cold; enjoy!
