2 Cup Rolled Oats
1/2 Cup Coconut Meat
1/2 Cup, sliced Almonds
3 Tbsp Vegetable Oil
1/4 Package (11 oz) Mixed Fruit
1/2 Cup (not packed) Raisins
Preheat oven to 350 degrees F.
Combine oats, coconut, and almonds in a large baking dish.
Drizzle with oil and toss until well blended.
Bake in preheated oven for 15-20 minutes, tossing every 5 minutes, until lightly toasted.
Allow mixture to cool slightly before mixing in dried fruit and raisins.
Store in airtight container and serve with soy milk, fresh fruit, and/or fruit juice.
