1 Medium (2-1/2" dia) Onions
2 Tbsp Spearmint
2 Cup grated Carrots
1 2/3 Oz Nonfat Greek Yogurt
1 Tbsp Curry Powder
1 1/2 Tsp Lemon Juice
2 Cup, shredded Cabbage
1 Dash Salt
1 Dash Pepper
Chop onion.
Chop fresh mint.
Peel and coarsely grate carrots.
Combine all ingredients (excluding salt and pepper) in a bowl, toss together well.
Season with salt and pepper to taste.
