1/3 Cup Light Mayonnaise
2 Tbsp Sour Cream
2 Tbsp Vinegar
1 Tbsp Honey
1 Tsp Poppy Seed
1/2 Tsp Salt
1/4 Tsp Pepper
4 Medium Cucumber
3/4 Small raw Red Onion
Slice cucumbers about ¼ inch thick and add to a bowl
Thinly slice a red onion and add to bowl
Add apple cider vinegar, garlic, fresh thyme, and 2 pinches of stevia to a blender and blend to smooth consistency
Pour vinegar mixture over the ingredients in the bowl
Toss and let sit overnight (it’s good right away, but it tastes even better when the ingredients hang out together for awhile).
Toss a bit before serving.
