3 Persian cucumbers, peeled and thinly sliced
1 tablespoons of grated ginger
2 tablespoons of olive oil
1 teaspoon of raw honey
2 tablespoons of pure organic lemon juice
1 shallot, thinly sliced
Zest of 1 lemon
Black pepper, to taste
Sea salt, to taste
Slice the shallots and cucumbers.
Set aside the chopped vegetables in a salad bowl.
Now combine the lemon zest, grated ginger, lemon juice, black pepper, olive oil and sea salt.
Mix well and add to the salad.
Serve right away.
